I am so excited to share this yummy and EASY recipe with you today!! I consider myself a bit of a Mexican food snob. My very first job was as a hostess (and eventually a server) at a Mexican restaurant when I was 16. I worked there through all of high school and eventually through a lot of my college career. Working there made me very picky about everything from the way my tacos are put together to the seasonings that are used in my carnitas (oh hi, best pork dish ever!). I also loathed when anyone ordered fajitas because 1) They smelled amazing and always made me hungry and 2) They were sizzling and smokey so consequently I smelled like a walking fajita. My mom always lovingly referred to it as the “fajita facial”. This could be why my dating career was sub par.
I have to be honest and say that I have absolutely no clue where I got this recipe, but I have been making (and loving!) it since our first year of marriage! There was a pretty good stint there when Pinterest wasn’t a thing yet and I wrote every recipe in a notebook. It is basically like the Bible in our house. Much like the Bible- we live by it, and it is also slightly hard to read.
This is one of my husband’s very favorite meals that I make, and honestly it is one of my favorites too! Which is really saying something, considering my self-proclaimed “connoisseur of all that is Mexican food” title. You know what else is amazing? It is totally healthy AND easy!!
I often use partially frozen chicken because let’s be honest, who has time for it to completely defrost! ha! It works like a dream and keeps the chicken really moist.
I like to julienne my onions and sweet mini peppers so they are in long pretty strips. It is all about presentation in my book!
Once everything is chopped, I throw it all in a 9×13 baking dish with the seasonings and mix until well combined. It is so nice to not have to dirty any additional bowls or dishes! Once the chicken is cooked thoroughly, after about 30 minutes, you can serve it in warmed tortillas, on a salad, or even in a bowl all by itself. Because you guys, it really is that good! I love it with a big dollop of sour cream, which makes it less healthy for your body but more healthy for your soul. Trust me.
This dish keeps really well, and if you ask my husband- it is totally better second day!
At less than 180 calories per serving, I’d say eating healthy looks pretty good!
Baked Chicken Fajitas
Easy, healthy, and delicious baked chicken fajitas!
- 4 boneless skinless chicken breasts sliced
- 12 sweet mini peppers sliced
- 1 medium onion sliced
- 1 can diced green chiles drained
- 2 tbsp olive oil
- 2 tsp ground cumin
- 2 tsp chili powder
- 1 tsp minced garlic (or garlic powder)
- 1/2 tsp salt
- 1/2 tsp oregano
Preheat Oven to 400 degrees.
Combine all ingredients into a 9x13 baking dish and stir to evenly coat.
Bake for 30 minutes or until chicken is cooked through.
Serve in warm tortillas, on a salad, or on it's own!
